*Gluten Free, Dairy Free, Sugar Free, Egg free, Raw, Vegan
Ingredients:
- 60g quinoa flakes (or gluten-free oats)
- 80g tahini (or other nut/seed butter)
- 50g Natvia (or preferred natural sweetener)
- 100g pea protein powder (Or protein powder of choice. Whey protein may be used if you are dairy tolerant)
- 150g mixed seeds (I used a mixture of pepitas/sunflower/linseeds/chia seeds)
- 100g slivered almonds (or other nut/s of choice)
- 50g craisins (or raisins)
- 50g unsweetened dried figs, stems removed and roughly chopped into smaller pieces
- 2 tsp cinnamon
- 70g cacao
- 1 tbsp mesquite powder (optional)
- 1 tsp pure vanilla extract
- 200ml almond milk (this quantity may need to be adjusted according to the type of protein powder used as some are drier than others)
- 50ml thick coconut cream
- 20g coconut oil
*Plus some desiccated coconut to rolls balls in
Directions:
- Place all ingredients, except desiccated coconut to food processor, and process on medium speed until well combined.
- Roll into balls, place on a lined tray (or in Tupperware-type container) and refrigerate until set. (If the balls are not holding together you might need to add a little more almond milk or water. If your hands are damp when roling this will help form a nice form shape)
